Lemon-Buttermilk Cake Pops

I’m still unclear as to why we decided to make cake pops… But I think Lesya decided we should make something the girls would really like. Ergo cake pops.

Lesya reminded me that “normal” people make cake pops with box cake and store-bought frosting. Yeah well I considered that for a few minutes, but really, how could I do that???

So I somehow dug up the recipe that I had wanted to start with, which I’m not even sure how I ran across in the first place, and got to work. And work it is.

Each girl gets a cake to break up. This was the start of the fun!!

Then we add frosting, make a big mess with our hands, and roll up our cake balls.

Since we didn’t have any candy melts (although now we do!!), we went with the melted white chocolate as the coating. This was more challenging than I expected, as I basically had to carefully frost each pop. The girls couldn’t really help with this step. Lots of work, indeed!!

I used two bars of white chocolate to frost about 20 pops. We’ll frost the remaining 30 pops later this week with the candy melts.
