I recently did a quick read of Peas and thank you by Sarah Matheny, looking for vegetarian ideas for the kids. The one thing that caught my eye was the hummus wraps.
For the hummus, adapted from the book:
1 can garbanzo beans, skins removed (this was a pain)
2 T tahini
Juice of one lemon
1 t salt
1 clove garlic, pressed
1/2 t cumin
3 T reserved bean liquid
Drain beans, reserving juice. Remove skins. Mix all ingredients in processor.
For the wraps, smear some hummus on a tortilla, add some mozzarella, then wrap like a burrito and fry lightly in a greased frying pan to melt the cheese. I used some bacon fat left in the pan.
