Almond Griddle Cakes

Cranberry Syrup:
– 0.5 c cranberries, fresh or frozen
– 0.25 c maple syrup
– 0.25 c water
– 0.5 t cinnamon

Almond Griddle Cakes
– 0.5 c freshly ground unsalted almonds
– 0.5 t baking powder
– 0.5 t cinnamon
– 2 T maple syrup
– 1 egg
– 4 egg whites
– 3 t olive oil (for frying)

For the syrup, put ingredients into a small saucepan and bring to a simmer over low, 15 minutes. Mash slightly, then remove from heat. Thin with water if needed.

For the griddle cakes, whisk together the dry ingredients. Add the wet ingredients, whisking gently and briefly. (For extra work: whip egg whites and then fold in to the mix.)

Fry on a griddle, 1/8 cup batter per cake, approximately 2 minutes per side. (233 cal for 3 cakes, 2 T syrup, and 1 T yogurt)
