Red Velvet Cake

Modified from Cook’s Country.

350 g flour (2.25 c)
1.5 t baking soda
Pinch salt
258 g buttermilk (1 c)
1 T white vinegar
1 t vanilla extract
2 eggs
12 g cocoa powder (2 T)
20-25 g red food coloring
12 T butter (1.5 sticks)
312 c sugar (1.5 c)

Oven 350 middle position. Grease and flour two 9 inch cake pans. In medium bowl, whisk together dry ingredients (first 3). In a large measuring cup, whisk together liquids (next 4). I then mixed together the cocoa and coloring to form a paste, but I recommend sifting the cocoa and adding it to the dry ingredients.

In stand mixer, combine butter and sugar and beat until fluffy, 2 minutes. Alternate addition of dry and wet ingredients. Finish with food coloring. Bake about 25 minutes or toothpick is clean. Cool 10 minutes and then de-pan and cool completely.
